5 INGREDIENT GRANOLA BARS



The SNACK ATTACK is real being at home! Here's a quick and easy granola bar recipe that you can make with only 5 ingredients! A delicious healthy snack idea for you and your loved ones.

RECIPE

INGREDIENTS

  • 1 heaping cup packed soft dates (I used 1/2c dates, 1/2c figs)

  • 1/4c maple syrup, honey or agave nectar

  • 1/4c natural peanut butter or almond butter

  • 1c almond slides

  • 1 1/2c rolled oats (I used spelt flakes)

  • Optional: Chocolate chips, coconut, dried fruit, vanilla, etc.



INSTRUCTIONS

  1. Process dates and figs in a food processor until small bits remain.

  2. Optional step: Toast your oats and almonds at 350F for 10-15 minutes or until slightly golden brown. Otherwise, leave them raw – I prefer the toasted!

  3. Place oats, almonds and dates and figs in a large mixing bowl – set aside.

  4. Warm maple syrup (or agave or honey) and peanut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout. Add additional ingredients now.

  5. Once thoroughly mixed, transfer to an 8×8-inch baking dish or other small pan lined with parchment paper so they lift out easily.

  6. Press down firmly until uniformly flattened – I used a drinking glass, to press down and really pack the bars, which helps them hold together better.

  7. Cover with plastic wrap, and let firm up freezer for 15-20 mins.

  8. Remove bars from pan and chop into 12 even bars or 24 squares. Store in an airtight container for up to a few days. I kept mine in the fridge to keep them extra fresh!
