A delicious way to have your egg salad sandwich with a healthier fat! All you need is 6 ingredients.
2 Boiled Eggs
1 Spoon of Hummus
Place eggs in a pot and bring to a boil, keep boiling for 7 minutes. When done, run under cold water for 30 seconds and remove the shells.
In a bowl, add eggs, avocado, hummus, and parsley. Mash. Add S&P if you wish.
Cut your bread. I buttered it and toasted it for added flavour!
Spread the egg mash onto the bread and add spinach.
