One pot wonders! I love curries because they are colourful, flavourful and you can make it all in just one pot. Spoiler alert! I use frozen vegetables for this one.
1 tbsp coconut oil
1 can coconut milk
2-3 tbsp Green curry paste
Bag of Thai style frozen veggies
Dash of fish sauce (optional)
3 cups Chopped kale
2 tbsp Fresh ginger minced
3 Garlic cloves minced
Warm pan over medium-high heat and add coconut oil. Once melted, add the ginger and garlic. Cook for about 1 minute then add coconut milk and curry paste.
Simmer for 5 minutes. Looking to lock in some of the flavours here and reduce some of the coconut milk (as the veggies will add liquid).
Add fish sauce. Taste the coconut milk to ensure you're happy with the flavour. Don't add too much fish sauce as it can be overpowering!
Add frozen vegetables. Cover and simmer until the vegetables are warm all the way through.
Next add the chopped kale, stir well, and let the leaved soften.
Voila - now enjoy!
If you like to have your curry on a grain you can cook brown rice or quinoa and serve it on top of that!
