Bake at your own risk! Honestly, these flourless zucchini peanut butter brownies are SO DELICIOUS you might as well double the recipe.
3/4c natural PB
1/4c pure maple syrup
1c shredded zucchini (don’t squeeze out water)
1/4c cocoa powder
2 tbsp ground flaxseed
3/4 tsp baking soda
1/4 cup dark chocolate chips
Splash of vanilla extract
Pinch of salt if using unsalted peanut butter
Topping (optional): shredded coconut & almond slices
Preheat over to 350F. Grease a loaf or 9x9 pan.
Add all ingredients to a bowl except the choc chips.
Mix together until well combined. Fold in choc chips.
Bake for 30 minutes The brownies are very moist so you may need to cook a little longer.
Let cool, then slice - if you have the patience to wait!
