Flourless Zucchini Peanut Butter Brownies


Bake at your own risk! Honestly, these flourless zucchini peanut butter brownies are SO DELICIOUS you might as well double the recipe.


RECIPE


INGREDIENTS

  • 3/4c natural PB

  • 1/4c pure maple syrup

  • 1c shredded zucchini (don’t squeeze out water)

  • 1/4c cocoa powder

  • 2 tbsp ground flaxseed

  • 3/4 tsp baking soda

  • 1/4 cup dark chocolate chips

  • Splash of vanilla extract

  • Pinch of salt if using unsalted peanut butter

  • Topping (optional): shredded coconut & almond slices



INSTRUCTIONS

  1. Preheat over to 350F. Grease a loaf or 9x9 pan.

  2. Add all ingredients to a bowl except the choc chips.

  3. Mix together until well combined. Fold in choc chips.

  4. Bake for 30 minutes The brownies are very moist so you may need to cook a little longer.

  5. Let cool, then slice - if you have the patience to wait!

  6. Enjoy!
