I'm always looking for ways to add extra veggies into my day… And I see no better way then with delicious treats. You MUST try these chocolaty, naturally-sweetened, V + GF, brownies made with 11 simple ingredients!!
1c sweet potato purée (see instructions)
2/3c maple syrup
1/2c natural pb
1 tsp pure vanilla extract
1½ tbsp avocado oil
1/2c cocoa powder
1/4 tsp sea salt
1 tsp baking powder
2/3 cup oat flour
1/2 c chopped raw pecans
1/4 c dairy-free chocolate chips
To make sweet potato purée, halve sweet potato and brush the cut sides with oil. Add to a parchment-lined baking sheet. Bake at 375 F for ~25-30 minutes /until tender. Peel away skin and mash in a mixing bowl. Set aside.
Change oven to 350F & line an 8×8-inch baking pan with parchment paper.
In a large mixing bowl, add sweet potato purée, maple syrup, peanut butter, vanilla, and avo oil. Combine.
Add cacao powder, salt & baking powder. Combine. Then add oat flour & stir until a thick.
Transfer batter to your 8x8 dish and spread evenly. Then top with pecans and chocolate chips.
Bake at 350F for approx 25 mins. A toothpick inserted into the center should come out mostly clean. Don't over cook or they will be dry! Remove from oven and let cool in the pan for 15-30mins.
